- 4 Boneless, Skinless Chicken Breasts, fat trimmed
- 1 Egg
- 3/4 C Parmesan Cheese, grated
- 3/4 C Italian Bread Crumbs
- 2 C Prepared Marinara Sauce
- 1/4 C Olive Oil
- 6 oz. Fresh Mozzarella (or shredded mozzarella if that's all you have on hand)
- 1/2 tsp Garlic Powder
- 1/2 tsp Onion Powder
- 1/2 tsp Seasoning Salt
- Salt and Pepper to Taste
Move the top oven rack about 4 inches below the broiler and preheat the broiler. Also, heat a large skillet with the olive oil over medium heat.
After trimming the fat, sprinkle garlic powder, onion powder, salt and pepper on each chicken breast. Then beat the egg in a small bowl and combine the breadcrumbs and Parmesan in another shallow bowl. Dredge each piece of chicken in the egg and then the breadcrumb mixture, making sure that each breast is completely coated.
Place the chicken breasts into the skillet with the olive oil. Saute the chicken just until golden brown, about 2-3 minutes on each side (the chicken will not be cooked all the way through at this point).
Meanwhile, pour the prepared marinara sauce into a baking dish (8x8 for two breasts or 9x13 for four). When the chicken is golden, remove the breasts from the skillet and place them in the prepared baking dish. Top each piece with mozzarella and broil for for 5-8 minutes or just until the sauce is hot and the cheese begins to brown slightly.
