- 24 Reduced Fat 'Nilla Wafers
- 8 oz. Almond Bark (Chocolate)
- 1/8-1/4 tsp Mint Extract (depending on how minty you want your cookies)
Line a cookie sheet with wax paper and set aside. Combine the solid almond bark and the mint extract (I recommend starting with 1/8 teaspoon--you can always add more extract later) in a small bowl. Then, melt the almond bark in the microwave on 50% power for 30 second intervals, stirring in between each interval. When the bark is melted and smooth drop 2-3 'Nilla Wafers into the bowl at a time and completely cover them in the minty almond bark.
Use a fork to lift each coated cookie out of the melted bark. Shake off the excess bark and place the cookie on the prepared wax paper.
If the chocolate begins to thicken up at any time simply microwave it again at 50% power for 15-30 seconds; stir, and continue dipping the 'Nilla Wafers.
When all of the cookies have been dipped and placed on the wax paper move the cookie sheet to the fridge. Chill until the almond bark solidifies. Transfer to an airtight container and store in the fridge for the authentic cold Thin Mint experience.
