Jamaican Rubbed Pork Chops

  • 4 Boneless Pork Chops, fat trimmed
  • 1 Clove Garlic, minced
  • 1/2 tsp Pepper
  • 1/4 tsp Ground Clove
  • 1/2 tsp Nutmeg
  • 1 tsp Jamaican Jerk Seasoning (if you don't have it, just double the amount of the other spices)
  • 2 TBSP Brown Sugar
After the fat is trimmed from the chops, pat them dry with a paper towel and set aside. In a small bowl, combine all ingredients except the pork chops. Stir with a fork to sift all of the ingredients together evenly. Drop a tablespoon of the rub on each chop to ensure that they are seasoned evenly. Then rub in the seasoning all over one side of the pork chop. Turn the chops over and repeat the seasoning process. 

Place the chops on a warm grill over medium heat. Grill with the lid closed for 10-15 minutes, turning once.
