Mashed Sweet Potatoes

  • 3 Large Sweet Potatoes (*I used EXTREMELY Large Sweet Potatoes! So, 6 average-sized)
  • 1 oz Fat-Free Cream Cheese
  • 1 TBSP Butter
  • 1/2 tsp Sea Salt
  • 1/2 C Brown Sugar
  • 1/2 tsp Cinnamon
  • 1 1/2 Roasted Pecans (Roasting is optional. It just adds to the flavor)
Wash, peel and cut the sweet potatoes into 1-inch cubes. Place the sweet potato cubes in a large pot of boiling, lightly salted water.Boil for 15 minutes or until the sweet potatoes become tender enough to be punctured by a fork. Drain and add to the food processor with the remaining ingredients and blend until smooth.
