- 1 Pre-Made Pizza Crust (I use Mama Mary's 100% Whole Wheat)
- 1/3 C Prepared Basil Pesto
- 2/3 C Cooked Chicken Breast, sliced or chopped
- 2 Roma Tomatoes, sliced thin
- 2 TBSP Feta Cheese
- 2/3 C Mozzarella
- 1 TBSP Olive Oil
Spread olive oil over the pizza crust and place in an oven preheated to 425 degrees for 5-7 minutes. This step isn't necessary, but it will produce a cracker like crust. If you'd rather have a softer crust, skip this step.
Remove crust from the oven and spread the pesto evenly over the top leaving a 1/2-inch margin around the edge for the crust. Top with chicken pieces, tomato slices and the two cheeses.
Bake in the preheated oven for 7-10 minutes or until the cheese is melted and golden brown at the edges.
