Garlic Aioli

  • 3 TBSP Garlic, minced
  • 1 Large Egg
  • 1 TBSP Lemon Juice
  • 1 TBSP Fresh Parsley
  • 1/2 tsp. Sea Salt
  • 1/2 C Olive Oil
  • Black Pepper to taste
Combine all the ingredients except the olive oil in a food processor. Blend until smooth.

While the food processor is running, slowly stream the olive oil through the opening in the lid (I'm sure there's a technical term for that thing, but I couldn't tell you what it is). Continue to process for a few more seconds until the mixture is emulsified and thick.

Refrigerate until ready to use, or can be served immediately. Use it to top your Mediterranean Veggie Pita!
