Bell Pepper Pico

  • 1 Carton (roughly 1 1/2 Cup) Grape Tomatoes, sliced in half
  • 1/2 Green Bell Pepper, finely chopped 
  • 1/2 Red Bell Pepper, finely chopped
  • 1/2 White onion, finely chopped
  • 2 TBSP Fresh Cilantro, chopped
  • Juice of 2 Limes (about 3 TBSP)
  • 1 TBSP Garlic, minced
Combine the lime juice, garlic and chopped onion in a medium sized bowl. 

Add the chopped bell peppers and toss together. Finish by adding the cilantro. Toss to combine and thoroughly coat with the lime juice.

Refrigerate at least 2 hours to meld the flavors. This makes a great topping for tacos, omelets or anything else you can dream up!
