- 1 C Unsweetened Applesauce
- 1/2 C Sugar
- 1 tsp Vanilla Extract
- 1/4 tsp Almond Extract
- 3/4 C Oat Flour (or ground oatmeal--not instant)
- 1/3 C Cocoa Powder
- 2 tsp Baking Powder
- 1/2 tsp Baking Soda
- 1/2 tsp Salt
- 1/2 C Semi-Sweet Chocolate Chips
- Dash of Cinnamon
Preheat the oven to 375 degrees and spray a standard sized muffin tin with non-stick spray. Combine all ingredients except the chocolate chips in a medium-sized bowl.
Fill the muffin tins about 3/4 of the way full and bake in the preheated oven 20-35 minutes or until a toothpick inserted into the middle of a muffin comes out fairly clean (I let mine stay a little fudgy in the middle).
Allow to cool 5-10 minutes in the muffin tins before turning out onto a wire rack. Serve warm or at room temperature.
