Low(er) Fat Banana Bread

  • 1 C Flour
  • 1/2 C Wheat Germ
  • 3/4 C Sugar
  • 1 1/4 tsp Baking Powder
  • 1/2 tsp Cinnamon
  • 2 Egg Whites
  • 1 C Banana, mashed
  • 1/4 C Applesauce
  • 1 tsp Almond Extract
  • 1/2 tsp Salt
Preheat the oven to 350 degrees and grease an 8x4 inch loaf pan. Sift all of the dry ingredients together in a medium-sized bowl (I do this by stirring with a fork) and set aside. Mash the banana with a fork in a large bowl and add the remaining wet ingredients to the mashed banana.

Slowly add the flour mixture to the banana mixture, stirring just until the batter is all moistened (lumps are ok).

Pour the batter into the prepared loaf pan and bake in the preheated oven for 50-55 minutes. Cool on a wire rack before removing the loaf from the pan.
