Spicy Island Pizza

  • 1 Prepared Pizza Crust (I prefer a thin crust variety. Any brand will work.)
  • 1/4 C Tyson Grilled and Ready Frozen Chicken Breast Strips
  • 1/4 C Pineapple, cubed
  • 1/4 C Prepared Thai Peanut Sauce
  • 1/2 C Shredded Part-Skim Mozzarella Cheese
  • 1 TBSP Fresh Cilantro, torn
  • 1 TBSP Olive Oil
Preheat the oven to 425 degrees (or the temperature suggested by the instructions with your pizza crust). Spread the tablespoon of olive oil over the crust and bake for 5-7 minutes. Meanwhile, place the chicken slices in a microwave safe bowl and microwave on high power for 30 seconds or until no longer frozen (cold is OK since the chicken will continue to heat in the oven).

Remove the crisped crust from the oven and spread the peanut sauce all over the crust leaving a 1/4-1/2 inch border for the crust. 

Continue by topping with the thawed chicken pieces. It may be necessary to tear some of the larger pieces into bite-sized chunks.

Next, place the pineapple chunks over the pizza and follow with the shredded mozzarella. Bake for 7-10 minutes, or until the cheese is completely melted and slightly browned at the edges. During the last minute of bake time, remove the pizza from the oven and sprinkle with the cilantro. Allow to cool slightly before slicing to prevent all of your toppings from sliding off with your pizza slicer.
