Wheat French Toast with Fresh Fruit and Yogurt

  • 4 Slices Stale Whole Wheat Bread
  • 5 Egg Whites
  • 1 tsp Pure Vanilla Extract
  • 2 tsp Honey
  • 1 tsp Cinnamon
  • 2 TBSP Vanilla Greek Yogurt (for topping)
  • Fresh Fruit and Berries as desired (for topping)
Preheat a griddle or large skillet to medium heat and spray with non-stick cooking spray. In a shallow bowl combine egg white, vanilla, honey and cinnamon. Beat lightly with a fork or whisk until well combined.

Dredge bread slices in the mixture one at a time until well coated. I like to let the bread sit in the mixture for 30 seconds or so to soak up as much flavor as possible. 

Place the bread on the preheated griddle or skillet and cook 2-3 minutes on each side, carefully checking occasionally to ensure that it doesn't burn.

Remove from heat and top with the Greek yogurt, berries, and or fruit (I used raspberries and bananas this particular time).
