- 3 Boneless, Skinless Chicken Breasts, cooked and sliced
- 1 Package Spring Mix Salad Greens, thoroughly washed
- 3/4 Fresh Pineapple, in chunks OR 1 Can Chunk Pineapple, drained
- 1 Large or 2 Small Cans Mandarin Oranges, drained
- Fat-Free Raspberry Vinaigrette
- Crumbled Feta as Desired
In a large salad bowl, toss lettuce, mandarin oranges and pineapple until the fruit pieces are evenly distributed.
Using salad tongs, serve single portions onto plates. Top with the sliced, cooked chicken, crumble feta cheese over the top and lightly drizzle with the raspberry vinaigrette. Enjoy as a side salad or as an entrée.
