- 1 Store Bought Pizza Crust (I used a thin, whole wheat variety)
- 1-2 TBSP Olive Oil
- 1/4 C Prepared Alfredo Sauce (try my reduced fat Alfredo)
- 2 C Fresh Baby Spinach, chopped
- 3 Campri Tomatoes, thinly sliced
- 1 1/2 C Part Skim Mozzarella
Preheat the oven to 425 degrees (or to the temperature suggested by the instructions on the pizza crust package. Place one crust on a sheet of foil apply a thin layer of olive oil. Bake for 5-7 minutes to achieve a crispier crust. Once partially baked, spread the Alfredo sauce over the prepared crust leaving a 1/2-inch crust open around the edges.
Sprinkle the chopped spinach leaves over the Alfredo sauce. Arrange the sliced tomatoes over the spinach layer. Sprinkle with the mozzarella and bake in the preheated oven for 7-10 minutes or until the cheese is completely melted and slightly golden around the edges.
