Fancy Chicken Nuggets

  • 1 Pkg. (3-4 Breasts) Boneless Skinless Chicken Breast, fat trimmed, cut into bite-sized chunks
  • 2 TBSP Olive Oil
  • 8 TBSP Wheat Panko Bread Crumbs (another variety of bread crumbs will work too)
  • 2 TBSP Grated Parmesan Cheese
  • 1/8 tsp Cayenne Pepper
  • 1 tsp Garlic Powder
  • 1/2 tsp Dried Parsley
  • 1/2 tsp Dried Oregano
  • Sea Salt and Black Pepper
Preheat the oven to 425 degrees and line a baking sheet with foil. Spray the foil with non-stick cooking spray and set aside.

In a small bowl, toss the olive oil and chicken bits. Make sure each nugget is evenly coated. Sprinkle with sea salt and pepper and stir once more. 

In a separate bowl combine the remaining ingredients. Use a fork to stir until the mixture is even. A few at a time, drop the oiled nuggets into the bread crumb mixture and toss to evenly coat. Place the seasoned nuggets on the prepared baking sheet and repeat until all of the nuggets are coated.

Spray olive oil (or other cooking spray) over the top of the nuggets and bake 8-10 minutes in the preheated oven. Turn the nuggets and continue to cook about another 5 minutes or until crispy and no longer pink.
