Revamped Horchata

  • 1 C Brown Rice, rinsed
  • 4 C Water
  • 2 Cinnamon Sticks
  • 1 C Skim Milk
  • 1/3 C  Agave Nectar, or to taste (yes, you can sub another form of sugar)
  • 1 tsp Pure Vanilla Extract
  • 1/4 tsp Almond Extract
  • 1/2 tsp Ground Cinnamon, plus some for garnish
Soak the rice and cinnamon sticks overnight or at least 8 hours.

Discard the cinnamon sticks and transfer the rice and water to a blender. Blend on high for about 5 minutes. 

Strain the mixture through a fine mesh strainer, cheesecloth, coffee filter or, believe it or not, the foot of a pair of pantyhose (worked like a charm) and into a pitcher. (Save what passes through the strainer and discard the pulp left behind).

Add the milk, sugar, vanilla and cinnamon and stir well to combine. Refrigerate until ready to serve. When ready to serve, pour over ice and garnish with a sprinkle of cinnamon on top if desired.
