Deep Dish Cookie Cake

  • 1/4 C (1/2 Stick) Butter
  • 1/2 C Raw Sugar
  • 1/2 C Brown Sugar
  • 1 Egg
  • 1/2 tsp Pure Vanilla Extract
  • 1 C Oat Flour (or whatever other variety you have on hand...but I wouldn't advise whole wheat)
  • 1 tsp Baking Powder
  • 1/2 tsp Salt
  • 1 C Semi-Sweet Chocolate Chips
Preheat the oven to 350 degrees. Place the butter in an 8" metal cake pan on the stove burner over low heat. As soon as the butter melts, remove the pan from the heat and turn off your burner.

Add the 2 sugars to the cake pan and stir well. Add the egg, vanilla, flour, baking powder and salt and stir again until completely combined.

Stir in the chocolate chips and make sure they're evenly distributed.

Bake in the preheated oven for about 30 minutes or until the top of the cookie browns and begins to pull away from the sides of the pan.

Cool in the pan, slice into wedges when completely cooled (waiting for the cookie to cool is seriously the hardest part of the whole recipe). Top with icing if your little heart desires, otherwise it is fine on it's own too!
